Each harvest is tested for moisture & volatiles, acid values, peroxide, absorbance, delta K and sensory values—and each year our EVOO is accredited and within range for EVOO standards—and with harmony balances ranging between 6.6-8 and total polyphenol values exceeding 500 mg/kg—which is excellent!
